Royal Buddha Bowl

Serves 1

Preparation Time: 10mins

Cooking Time: 30mins (depending on your rice cooker)

Ingredients: 

1 cup of Royal Umbrella Thai Mixed Rice 

1.5 cups of water

Plant-Based Protein (eg.Tempeh or Tofu )

Any Vegetable of your choice (eg. Carrot, Kale, Cucumber,cabbage)

Curry Dressing:

1 Tbsp Oil (eg.Extra Virgin Olive Oil, Avocado Oil, Chai Seed Oil)

1 Tsp Wholegrain mustard 

1 Tsp Rice Vinegar

1/4 Tsp Curry Powder

Pinch of Salt

Instructions:

1.     Wash and cook Royal Umbrella Thai Mixed Rice (1 cup of rice with 1.5 cups of water)

2.     Combine the ingredients for the dressing in a small bowl, mix well until it is smooth in texture. Set aside later.

3.     Prepare the vegetable by slicing or cutting them into bite sized pieces. Set aside.

4.     Pan fry the Tempeh or Tofu until golden. 

5.     To assemble, place a portion of the cooked Royal Umbrella Mixed Rice on the serving bowl. Add the fresh vegetables and tempeh/tofu. Drizzle the curry dressing on the top. Serve and enjoy!
