Mexican Beef Baked Rice Cheese

Portion: Serves 4

INGREDIENTS

1 cup Royal Umbrella Thai Hom Mali Rice (Rinse, drain and set aside) 

50 gm Butter

1 Onion diced

1 tbs Sweet Smoked Paprika Powder (may use ¾ tbs Smoked Paprika powder and 1 tsp sugar)

1 tsp Cumin Powder

1 tsp Oregano

1 tsp Chili Powder

1 tsp Salt

200 gm Minced Beef 

1 cup Tomatoes Sauce

2 ½ cup Beef Stock 

Mozzarella Cheese (Use when baking in oven)

 

GARNISHING INGREDIENTS:

Large Green Lime

Cilantro (Sliced in chunks)

 

STEP 1

1.    Melt the butter in a large pot, sauté onion over low heat till translucent but not burnt.

2.    Add in sweet smoked paprika powder, cumin powder, oregano, chili powder, salt and minced beef to stir-fry over medium-high heat for 5 mins till cooked.

3.    Add in Royal Umbrella Thai Hom Mali rice and stir fry for 3 mins, poured in tomatoes sauce and mix well with all ingredients for another 3 mins.

4.    Poured in the beef stock and bring it to boiling. Cover it and put it in simmer low heat to cook for another 15 mins or until all liquid has absorbed well.

5.    Remove from heat with the cover on and let it sit for 5 -10 mins

 

STEP 2

1.    Pre-heat the oven to 220 degree.

2.    Transfer the rice into casserole, spread plenty of mozzarella cheese on top to cover fully and put it into oven to baked for 10- 15 mins till mozzarella cheese is slightly burnt and serve.

3.    Garnish with cilantro on top and squeeze lime juice over it.
