Christmas Italian Rice Ball

(Serves 4)

Ingredients:

1 cup of Royal Umbrella Thai Hom Mali Rice, cooked

Golden Circle Vegetable Oil for deep frying

3 potatoes

2 tbsp unsalted butter

2 cloves of garlic, finely chopped

225g minced chicken

½ yellow onion, finely diced

50g red pepper, finely diced

50g green pepper, finely diced

50g yellow pepper, finely diced

3 tbsp black pepper sauce

2 tsp sugar

250g Mozarella cheese, cut into cubes

Bread crumbs 

2 Eggs, beaten

Cooking Method:

1.     Bring a pot of salted water to a boil (add salt into water). 

2.     Add potatoes and cook until tender. Drain the potatoes, mash and set aside.  

3.     In a skillet, melt butter on medium heat. 

4.     Add in garlic and fry till fragrant.

5.     Add in minced chicken, yellow onion, red, green and yellow pepper and fry till chicken is fully cooked. 

6.     Add in Royal Umbrella Thai Hom Mali cooked rice, black pepper sauce and sugar. Stir-fry until all ingredients are thoroughly mixed. 

7.     Once rice mixture is cooled, mix in mashed potatoes.

8.     Shape rice mixture into patties. Place a cheese cube in the center of each patty. Shape the rice mixture around the cheese, forming a ball. 

9.     Place beaten eggs and breadcrumbs into two separate bowls. Dip the rice balls in the beaten eggs then coat with breadcrumbs.

10.  In a pot, heat Golden Circle Vegetable oil on medium high. Deep fry rice balls until golden brown. Drain on paper towels before serving.
